South Indian food is based on lentils and rice, flavored with coconut, mustard seeds, curry leaves, and sambar spice mix. Essential also is a rice and lentil batter that is used to make crispy, thin crepe-like flatbreads called dosas, idlis, and uttapam. Representing rice, my weeknight Instant Pot biryani is especially irresistible.
